I know I just had a baby, but I needed to share the recipe that I couldn't stop making over and over again in the weeks leading up to now (and now I have my husband making this for me on repeat too, until I’m recovered because it’s always on my mind).

This salad became that lunch—the one I craved constantly, felt good and energized after eating, and could meal prep without getting bored. Is it the healthiest salad on the planet? No…there is cheese and mayo involved…whatever. HOWEVER, is it still nutritious and delicious and better for you than most lunches ?! In my opinion, yes!

I’ve always loved a kale Caesar, but I wanted a recipe with a little more energy when I first made this. Enter: buffalo chicken, a sweet-heat Caesar dressing with a hint of honey and buffalo or hot sauce, crispy Parmesan crisps that I refuse to skimp on, and a creamy slice of avocado to cool it all down. Everything is tossed in a blend of romaine and kale to keep things crunchy and cool.

This salad is crunchy, creamy, tangy, spicy, salty, sweet—basically everything I want from a lunch that doesn’t feel like “just a salad.” BTW, if parmesan crisps aren’t your thing, just skip them. Or, you can buy them pre-made. I hope you love this recipe as much as I do!
