lemony leeky gnocchi with sweet italian sausage, asparagus and peas
if you need a well-rounded, veggie packed, insanely flavorful 30 minute meal to feed the fam this weekend!
On my journey to make delicious, easy family dinners at home, I decided to make this clear out the fridge meal that was perfect for this confusing March weather where it’s 35 degrees one day and 67 degrees the next! This all comes together in one pan with browned, juicy sweet Italian sausage, leeks, peas, asparagus, gnocchi, lemon and cream. The sauce is bright, yet comforting and this dish honors spring and winter at the same time. It took me 30 minutes to throw this together and we alllll loved it (yes, even my toddler!!!)
I know these pics aren’t the sexiest, but trust me, the taste is very sultry and unforgettable. And leftovers go great with an arugula salad with olive oil and lemon juice for a quick and easy lunch.
If you don’t eat pork, there are chicken sweet Italian sausage alternatives, or you can make your own sweet Italian sausage mixture with ground chicken. Including a spice blend below!
