one pot coconut lime salmon with veggies
because it's finally not frigid out and it's still citrus season!!!
I am on a mission to stop eating so much chicken. I mean…did I buy chicken today at the store for my weekly family menu?…yes… yes, I did. HOWEVER, it is not the star protein that will be enjoyed in our household anymore. Chicken is great, but variety is better. So, that’s why I decided that tonight, we’re having salmon for dinner!!! Another common protein choice? Sure! But that doesn’t mean it’s boring! We can have fun with fish just like we can have fun with chicken!!!
I’ve had Thai green curries with chicken and veggies before and that’s what inspired me to make a salmon version with this easy one pot meal. This is not the labor of love that a Thai green curry is, but it’s got so much flavor and comes together quickly in the 30 minute arena. Our salmon is braised in a coconut milk/lemongrass/lime mixture with tons of delicious aromatics (read the recipe and you’ll drool) and then we add some veggies to steam at the end. Serve everything drenched in the drinkable sauce and you have yourself a party. I hope you enjoy this as much as I do!
