primavera pasta salad with goat cheese, lemon & grilled chicken

This pasta salad is spring AND summer in a bowl—it’s fresh, colorful, and super satisfying. It can apply to both spring and summer because (well, it’s just that good) and contains fresh elements from each season. You’ve got tender pasta, juicy grilled chicken, grilled summer squash and asparagus crisp snap peas, juicy tomatoes and sweet peppers all tossed with a punchy lemony dressing and tangy goat cheese. It’s easy to throw together, tastes great warm or cold, and makes the perfect laid-back dinner or meal prep lunch.
I personally like to meal prep this for the week (it usually lasts 2-3 days for my husband, toddler and I) or I like to make this for having people over! It’s a well rounded dish that can be served family style or individually and I love that it’s packed with veggies, but that’s not the focal point because it’s so well balanced.
For this recipe, I grilled the chicken, squash and asparagus. While that’s what I did, YOU DO NOT NEED A GRILL for this recipe!!! You can 1000% skip grilling and roast the chicken and vegetables. I put that method below as well so you have all the options.
Also, if you’re a vegetarian, just skip the chicken all together and add a little extra squash or zucchini. SO GOOD.
